Coy and I were down in Cherry Grove for a few days with friends the past few days. We leave on Saturday again for a week of fun time with my family on Saturday.
We walked down to the pier one night.
Then walked out on the ocean for a bit. The moon was beautiful!
The next day we went on the beach. We were rained off, but there was a beautiful rainbow after terrain storm.
On the way home yesterday, I discovered a new snack favorite. A little sweet with salty!
And on the way home, we stopped at The Sundae House to get my favorite college meal. Still so delicious! Philly cheese steak.
Once we got home, the in-laws brought over some farmers market veggies. I threw together a summer salad and put in the fridge to let the favors blend for dinner.
I forgot to take pics in the beginning, but you'll get the gist of it.
Start with cucumbers, tomatoes, a little salt, pepper, a sprinkling of sugar, a splash of red wine vinegar, and 1/4 cup of basalmic vinegar. Mix together and keep in fridge at least 4 hours to let flavors develop. Before serving, chop some fresh basil and sprinkle on top.
